- Prepare 1 lb crawfish tail
- Provide 1 cup onion, chopped
- Provide 1 cup celery, chopped
- Use 1 cup green bell pepper, chopped
- Take 4 garlic cloves, minced
- Provide 1 bunch green onions, chopped
- Use 5 tbsp butter
- Provide 5 tbsp flour
- You need 2 cups shrimp or chicken stock
- Use 1 tbsp Worcestershire sauce

- In a heavy pot, add butter and flour on low heat. Whisk constantly until the roux turns a peanut butter color
