- Use 1 kg Daikon radish
- Use 2 tbsp Coarse salt
- Prepare [A]
- Provide 4 tbsp The juice of 1 yuzu + vinegar

- Peel the daikon radish and slice into 1 cm thick rounds, then into 1 cm wide matchsticks, cutting against the grain.
