- Provide 3 each med sweet potatoes, peeled and cut into 1 inch pieces
- Prepare 1 each med sweet onion, cut into 1 inch pieces

- Prepare 2 tbsp olive oil
- Prepare 1 lb smoked kielbasa or polish sausage, halved and cut into 1 inch pieces( I used about a pound and a half )
- Prepare 1 each med yellow summer squash, cut into 1 in pieces
- You need 1 each medium zuccini, cut into 1 inch pieces
- Provide 1/4 salt or seasoning salt
- Get 1/4 tsp pepper
- Use 3 each small to med tomatoes( I added these, not origionally called for in recipe)
- Provide 1 a touch of Dijon mustard, optional ( I didnt use it)
- Take 1/4 tsp celery salt( optional, I added this )
Instructions to make Roasted kielbasa and vegetables:
- preheat oven to 400°F. divide sweet potatoes, onion and carrots between 2 greased 15x10x1 inch baking pans. drizzle with oil; toss to cost. roast 25 minutes, stirring occasionally.
- add kielbasa or sausage, squash, zucchini, and tomatoes to pans ; sprinkle with salts and pepper. roast another 15 ~ to 20 minutes longer or until vegetables are tender. transfer to a serving bowl; toss to combine. if desired serve with mustard.
