- Prepare 3 lb bag red potatoes; cut in fourths, or bite size pieces
- Use 1 each yellow, red, and green bell pepper; medium dice
- Take 1 yellow onion; medium dice
- You need 3 clove garlic; minced
- Prepare 1 packages bacon
- Provide 2 tbsp onion powder
- Take 2 tbsp paprika
- Prepare 1 tbsp garlic powder
- You need 1/2 cup horseradish mustard
- You need 1 vegetable oil to coat
- Provide 1 salt and pepper
- Use 1 bunch scallions; cut on bias
