  2. Use 100 gm maida/all purpose flour
  3. Get 1 egg
  4. Take 1 pinch salt
  5. Prepare Mushroom filling
  6. You need 100 gm mushroom chopped
  7. Use 1 onion finely chopped
  8. Use 5 cloves garlic finely chopped
  9. Take 1 tbsp grated cheese
  10. Provide 1 tbsp olive oil
  11. Prepare 1/4 tsp salt
  12. Provide 1/4 tsp pepper
  13. Take 1/4 tsp nutmeg powder
  14. You need 1 tsp cream
  15. Provide 1 tbsp parsley/coriander chopped
  16. Provide Mushroom sauce
  17. Provide 100 gm mushroom sliced
  18. You need 5 cloves garlic finely chopped
  19. Use 1 onion finely chopped
  20. You need 1 cup vegetable stock
  21. Prepare 4-5 leaves spinach finely sliced
  22. Use 1/2 capsicum chopped
  23. Use 1 tbsp parsley/coriander
  24. Provide 1/4 tsp salt
  25. Prepare 1/4 tsp pepper
  26. Take 1/2 cup cream
  27. You need 2 tbsp olive oil
  28. Take 1 tbsp grated cheese
Steps to make Mushroom Ravioli:
  1. In a bowl add maida and salt. Mix and make a well in the center. Then add the egg in the center and beat the egg with the fork. Then slowly incorporate the maida from the inner side and then the outer ones. Mix till there's no flour left. Then knead with hand for 5 mins. Wrap with plastic wrap and keep aside for half an hour.
  2. Mushroom filling: heat oil in a pan. Add garlic and onion saute for 1min. Then add the chopped mushrooms, salt, pepper and nutmeg powder. Cook on medium flame till there's no moisture left. Remove from heat Then add the grated cheese, parsley and cream. Mix well to combine everything. Let it cool. Keep aside
  3. Now after half an hour remove the cling wrap from the pasta dough and roll into a very thin transparent sheet. If u have a pasta machine use the machine. Then cut out small circles from the sheet. On each circle put 1 tsp of the filling, apply water on tge sides using finger and then put another circle on it and seal. Then make designs on the sides using a fork. Make all the raviolis in the similar way. Makes around 12 raviolis.
  4. Heat water in large pot with 1tsp salt and 1tbsp olive oil. Boil the raviolis for 3 -4 mins till they start floating on water. Then remove on paper towel.
  5. Mushroom sauce: heat oil in a pan. Add garlic and onion. Saute till pink. Then add the mushroom slice, spinach, capsicùm, salt and pepper and cook on medium flame. Then add the veg stock and mix. Cover for 5 mins. Then add cream and parsley. Make the sauce a little thick to pouring consistency.
  6. Plating: on a plate put 3-4 raviolis. Pour some mushroom sauce over them. Garnish with some grated cheese and chopped parsley/coriander.
