- Use Egg Noodles
- You need Garlic mince
- Take Salt or to taste
- Provide Eggs
- Use Black Pepper powder
- Take Red Chilli powder
- Get Onion finely chopped

- Get Tomato chopped
- You need Capsicum finely chopped

Steps to make Egg Noodles:
- Boil noodles in enough water with little salt and oil till al dente. Drain and set aside.
- Heat olive oil in a deep cooking pan. Saute garlic at first. Add onions next and saute until light pink in colour.
- Now add red chilli flakes and pepper powder followed by chopped tomato and the other two veggies. Do not cook much. The crunch in them should be retained.
- Take out the veggie mix in a plate. In the same pan, break 3 eggs and scramble them and cook until soft. Add salt and pepper to it. Mix well and add the veggie mix and noodles both. Stir well and garnish with coriander and spring onions. Place boiled eggs on top of each serving plate. It is optional. I usually serve it this way. Enjoy!
