The ingredients needed to make Mom's Potato Salad:
  1. Take 1 tbs Frenchs Mustard
  2. Provide 2 cups Best Foods Mayo
  3. Prepare 5 lbs potatoes (1/2 sack)
  4. Take 1 1/2 tbs salt
  5. Prepare 1 tsp ground pepper
  6. Provide 1 cup celery, fine chopped
  7. Use 1/2 cup sweet pickles, fine chopped
  8. Prepare 8 Large eggs hard boiled, fine chopped
  9. Take 1/2 cup green onions (chives), fine chopped
  10. Get 1/3 tsp paprika
Instructions to make Mom's Potato Salad:
  1. Tools: extra large pot, med mixing bowel, whip, paring knife, chopping knife, extra large server bowl, salad sever spoon.
  2. Boil peeled potatoes in pot until soft, but not mushy. Check often with a fork. About 50-60 min cook time. Let stand 10 min, drain, set aside 30 min.
  3. Boil eggs, peel, fine chop six eggs. Add to potatoes, do not stir yet. Fine chop your pickles, celery and onions. Add to potatoes and eggs. Mix all together.
  4. In a separate small mixing bowel, add your mustard and mayo with salt, pepper, dash of paprika, mix and or whip well. Add to potato salad mix. Mix well. Garnish with two sliced hard boiled eggs, chives, and a dash of paprika. Optional: sliced black olives, fresh purple onion flowers (see pic)
