- Get 12 medium sized potatoes
- Prepare 6 cloves garlic crushed
- You need to taste Pepper
- You need to taste Salt
- Take Herbs/ spice of choice (rosemary or thyme leaves)
- Provide 2 tbsp margarine or butter to liking
- Provide 2 tbsp grated cheese (optional)

- Scrub potatoes clean and pat dry
- Slice potatoes thinly, put in a bowl, set aside.
- In a pan heat the margarine or butter, throw in the garlic, spices, herbs and salt to stir until aromatic. Turn heat down, set aside.(adjust spices according to taste)
- Prepare the baking tray or casserole dish, apply some oil to prevent the potatoes from sticking. Arrange the potatoes in. I used a muffin tray
- Bake in oven at 180 degrees for 30 minutes. The outside will be crisp and the inside soft.
- Remove from oven sprinkle cheese and parsley. Pop back into oven for 3-5 minutes
- Serve with favorite protein dish. I served mine with eggs and tomato sauce.
