Instructions to make New York Style Pizza:
  1. Whizz the tomatoes and keep aside.
  2. In a heavy bottom pan, heat the oil and butter.
  3. Now add the onion and garlic.
  4. Once the garlic and onion are little brown, pour the tomato puree.
  5. Cover and let it simmer for 10-15 min on medium flame.
  6. Now add the salt, sugar and pepper.
  7. Let it cook until the fat separates.
  8. Add the herbs and take out the onion halves.
  9. Taste and adjust the seasoning.
  10. Let it cool until further use.
  11. Dough Method: Food processor-
  12. Put the yeast in 5-6 tbsp water with sugar if you are using active dry yeast and let it sit until it froths.
  13. In the processor bowl, mix maida, yeast and sugar.
  14. Now add the salt.
  15. Add water little at a time so that the gluten is formed.
  16. It shall be really sticky.
  17. Add the olive oil and let it mix well.
  18. Bring it out of the bowl onto a floured surface.
  19. Knead for 4-5 min until it is nice and cohesive.
  20. Put it in an oiled bowl and cover it with cling film.
  21. Let it rise in a warm place for atleast 1 hour.
  22. Punch down the air of the dough and keep it aside ready to be assembled.
  23. For the topping:
  24. Pre heat oven to 200C.
  25. In a baking tray, put oil on the surface and sprinkle some semolina.
  26. Take about 1/4th of the dough and spread is nice and thin.
  27. Apply the sauce/sauces.
  28. Add the topping.
  29. Sprinkle chilly flakes and oregano on top.
  30. Put a few drops of olive oil on it.
  31. Cover with cheese.
  32. Place in the oven for 15 in on bottom heating and for 5 min on both.
